Beet Hummus
Ingredients
- 1 roasted beet*, peeled and cut into chunks
- 1 can of chickpeas, drained and rinsed
- ¼ cup tahini
- Zest and juice from 2 lemons
- 3 cloves of garlic, chopped
- 1/3 cup olive oil
- 1 tsp. kosher salt
- Chopped herbs for garnish
Preparation
- In the bowl of a food processor with blade attachment combine beet, chickpeas, tahini, lemon juice, lemon zest, garlic, and salt
- While motor is running, drizzle olive oil and run until smooth
- Taste and adjust seasonings as needed
- Place hummus on serving dish, garnish with herbs, olive oil or crumbled feta cheese
- Serve with pita chips, carrot sticks, celery sticks and radishes
Notes
*Remove greens from beets, rinse, and wrap each beet in tin foil
Roast in 375° oven for an hour or so until fork easily pierces beet
Allow to cool and peel should easily be removed from beets
