Brussel Sprout Salad with Sherry Dressing
Ingredients
- 1 lb. Brussel sprouts thinly sliced
- ½ red onion sliced thin and quartered
- ½ cup freshly grated Parmesan cheese
- ½ cup chopped pistachios
- Dressing
- 1/3 cup Extra Virgin Olive Oil
- Juice from ½ lemon
- 1 tbsp. Sherry vinegar
- 1 tbsp. Dijon mustard
- 1 tsp. honey
- Salt and pepper to taste
Preparation
- Add Brussel sprouts and onion to bowl
- Mix all ingredients for dressing until emulsified
- Add dressing to bowl and toss thoroughly
- Add Parmesan and toss again
- Scatter pistachios on top and serve
