Casey’s Pickled Shrimp
Ingredients
- 3 cups water
- 1 cup rice vinegar
- 1 cup white wine vinegar
- 5 cloves garlic, chopped
- 3 jalapeno peppers deseeded and thinly sliced
- 2 bay leaves
- 1 tbsp. crushed red pepper
- 2 tsp. kosher salt
- 1 tsp. whole black peppercorns
- 2 1bs. large shrimp- uncooked, shelled and deveined with tails on
Preparation
- In large saucepan combine all ingredients except for shrimp
- Bring to a boil, while boiling add shrimp and stir continuously for 1 minute
- Remove from heat and transfer shrimp to large bowl. Cool to room temperature
- Cover and refrigerate for at least 8 hours
- To serve remove shrimp from pickling liquid and place on platter
- Remove pickled jalapeno slices and place on top of shrimp
