Ingredients
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tbsp. baking powder
- 1/3 tsp. salt
- 6 tbsp. unsalted butter, chilled, and cut into slices
- ¾ cup dried sour cherries (or craisins, yellow raisins or other dried fruit)
- 1 cup heavy whipping cream
Preparation
- Pre-heat oven to 400°
- In a large bowl, mix flour, sugar, baking powder and salt
- Add butter using a pastry blender until coarse crumbs form
- Using a fork, stir in the fruit and cream and mix until it forms a soft dough. Let stand for 2 minutes
- Transfer to a lightly floured surface. Knead if necessary until the dough forms a ball
- Do not overwork the dough
- Press into two ½ inch high rounds
- Cut each round into 6 triangles
- Place individual scones on a large baking flat sheet, about 1 inch apart
- Sprinkle scones with sugar
- Bake for about 15 minutes until golden
