Greek Pasta Salad
Ingredients
- 1 ½ cups ditalini pasta (or any small noodle like orzo)
- 1 15 oz. can chickpeas drained and rinsed
- 2 cups cherry tomatoes quartered
- 1 English cucumber peeled and diced
- ½ cup olives pitted and halved
- ½ red onion chopped
- 1 green bell pepper chopped
- ½ cup feta cheese crumbled
Dressing- 1/4 cup extra virgin olive oil
- Juice and zest from 1 lemon
- 1 tbsp. Dijon mustard
- 1 tsp. honey
- 1 tsp. dried oregano
- Salt and pepper to taste
Preparation
- Cook pasta in salted water until al dente
- Drain and allow to cool
- At bottom of serving bowl mix add all dressing ingredients, mix until emulsified and stir in chickpeas and allow them to marinate
- Add tomatoes, cucumber, olives, red onion, green pepper and pasta
- Toss to thoroughly combine
- Add crumbled feta and stir again
- Adjust seasonings with salt and pepper
- Serve immediately or cover with plastic wrap and chill
