Ken’s Coconut Gravy
Ingredients
- 2 cups turkey drippings, solids strained
- 1 tbsp. flour
- 1 tbsp. butter
- 1 tbsp. oil
- 1 tsp. cayenne pepper (or to taste)
- 1 tsp. turmeric
- 1 tsp. jerk seasoning (or to taste)
- 1 13.5 oz. can full fat coconut milk
Preparation
- Combine the butter, oil, and flour in a saucepan over medium heat
- Heat gently while whisking continuously to form a smooth roux, caramel in color
- Add warm turkey drippings ½ cup at a time, whisking continuously to combine
- Add cayenne, turmeric and jerk seasonings
- Keep whisking to incorporate
- Reduce heat to low, add coconut milk and continue whisking until desired consistency
