Lemon Squares
Ingredients
- Crust
- 1 cup all-purpose flour
- ¼ cup sugar
- ½ tsp. kosher salt
- 1 stick (8 tbsp.) unsalted butter, melted and cooled
- Lemon Filling
- 2 large eggs
- 1 cup sugar
- ½ tsp. baking powder
- Zest and juice from 2 lemons
- Powdered sugar and flaky sea salt for garnish
Preparation
- Pre heat oven to 350°. Grease an 8-inch baking pan, and line pan with parchment paper allowing for paper to hang over the sides
- Grease parchment paper
- Whisk together flour salt and sugar
- Add melted butter and stir to combine
- Put mixture into baking pan and press evenly over the bottom
- Bake on middle oven rack until edges are lightly browned, 20-25 minutes
- Meanwhile, beat eggs in a bowl until combined
- Add sugar, baking powder, lemon zest and lemon juice
- Beat on medium high for 3 minutes until frothy
- Remove baked crust from oven and add filling
- Bake until filling is set 22-25 minutes
- Cool thoroughly for an hour
- Cover and chill in refrigerator for at least 4 hours, ideally overnight
- Cut into 2-inch squares, sprinkle with flaky sea salt and dust with powdered sugar.
