Muenster Mashed Potatoes
Ingredients
- 1 large head of garlic
- 3 lbs. Russet potatoes, scrubbed and cut into uniform chunks
- 1 ½ cup of heavy cream
- 4 oz. shredded Muenster cheese
- extra virgin olive oil
Preparation
- Heat oven to 350°
- Slice off the top of the head of garlic and drizzle with olive oil
- Wrap in aluminum foil or place in garlic baker
- Roast for 1 hour
- Squeeze out garlic cloves from skin and mash into small bowl
- Set aside
- Add potatoes to large pot and cover with water, add a few teaspoons of salt
- Bring to a boil and simmer until potatoes are tender, about 20 minutes
- Drain and return potatoes to pot, heat and stir until excess water is removed
- Warm heavy cream in microwave
- Mash potatoes and stir in half of warmed cream, add rest of cream and mix
- Mash until no lumps remain and stir in cheese and mashed garlic
- When cheese is melted, stir in 1 tbsp. of olive oil
- Salt and pepper to taste
- Place in serving dish and drizzle with more olive oil
