San Francisco Garlic Noodles
Ingredients
- 8 oz. linguine or spaghetti noodle
- 2 tbsp. extra virgin olive oil
- 4 tbsp. unsalted butter
- 12 cloves medium size garlic, minced
- 2 tsp. fish sauce
- 2 tsp. oyster sauce
- 2 tsp. Maggi sauce
- ½ cup grated parmesan cheese
- 3 green onions thinly sliced, white and green parts
Preparation
- Stir together fish sauce, oyster sauce and Maggi sauce and set aside
- Bring large pot of water to boil and add pasta, cook to 1-2 minutes less than suggested al dente
- While pasta boils heat olive oil in large skillet over medium
- Add butter when glossy
- Add garlic and sauté for 2 minutes, be careful not to brown
- Add combined sauces and stir to combine
- Turn down heat to low
- Drain pasta and reserve 1 cup of pasta water
- Add pasta to garlic sauce and stir to coat noodles
- Add parmesan cheese and toss, if sauce seems thick add pasta water a small amount at a time until glossy
- Add green onions and toss further
- Pass additional cheese at table
