Savory Tuna Pasta
Ingredients
- 1 lb. spaghetti
- 3-4 5oz. cans tuna in olive oil, drained reserve oil
- 5 cloves of garlic chopped
- 4 anchovy fillets chopped or 2 tsp. anchovy paste
- 1 tsp. red chili flakes
- 2 tbsp. capers, chopped
- Zest and juice from 2 lemons
- ½ cup chopped fresh parsley
Preparation
- Bring large pot of water to boil, add salt and pasta and cook until al dente
- Before draining save 1 cup of pasta water
- Meanwhile, warm oil from tuna can in large skillet over medium heat
- Add garlic, anchovies and red pepper flakes, stir to combine
- Add drained pasta, capers and toss for a minute
- If pasta seems dry add ½ cup of pasta water and toss more
- Add tuna, lemon zest and juice, mix without breaking up tuna too much
- Adjust taste with salt and pepper, mix with parsley
