Shaved Brussels Sprout Salad
Ingredients
- 1 lb. brussels sprouts shaved thin
- ¼ cup fresh parsley chopped
- ½ cup sliced almonds toasted
- ½ cup craisins chopped
- ½ cup shredded parmesan cheese
- Dressing
- ¼ cup extra virgin olive oil
- Juice and zest from 1 lemon
- 1 tsp. Dijon mustard
- 1 shallot minced
- 1 tsp. honey
- Salt and pepper to taste
Preparation
- Mix dressing ingredients, adjust salt and pepper and set aside
- Discard tough leaves outside of brussels sprouts
- Use thinnest slicing setting on mandolin to shave brussels sprouts
- Discard stems
- Add shaved sprouts, parsley, almonds, craisins and parmesan to large bowl
- Add dressing and toss thoroughly
- Adjust seasonings
- Let salad sit at room temperature for 15-30 minutes
- Toss again and serve
