1 red pepper stemmed, seeded, and sliced in thin strips
1 green pepper stemmed, seeded, and sliced in thin strips
2 white onions, halved and sliced into thin moons
1 packet fajita or taco seasoning
Extra Virgin olive oil
1 ½ -2 lbs. of pork tenderloin or lean boneless pork chops, sliced into strips
1 lime halved and 1 lime cut into wedges
8 fajita sized flour tortillas
For garnish: shredded sharp cheddar, jalapeno peppers deseeded and sliced thin, salsa, chopped green onion, cilantro
Preparation
Preheat broiler to high. Line a rimmed baking sheet with foil
Place peppers and onion on baking sheet and sprinkle with 1 tbsp. of the fajita seasoning and drizzle with olive oil and mix thoroughly
Broil for 7-10 minutes until vegetables are softened and charred
Meanwhile, add tbsp. of seasoning to pork strips and drizzle with olive oil mix together
When pepper, onion mixture is charred, move to one side of pan, add pork strips to other side and place under broiler for 5-7 minutes until beginning to brown
Squeeze juice from one lime over meat and vegetables.
Warm tortillas in damp paper towel in microwave for 30 seconds until softened
