Spinach and Artichoke Dip
Ingredients
- 1 tbsp. canola oil
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 12 oz. jar marinated artichoke hearts, drained
- 1 10 oz. package of chopped spinach, thawed and liquid extracted
- ½ cup sour cream
- 2 tbsp. mayonnaise
- 4 oz. cream cheese softened
- ½ cup mozzarella cheese, shredded
- ½ tsp. salt and pepper
Preparation
- Preheat oven to 375°
- Heat oil in medium skillet add onions and cook until softened
- Add garlic and cook until golden
- Remove from heat and allow to cool
- In food processor with blade attachment combine artichoke hearts, spinach, sour cream, mayonnaise, cream cheese and mozzarella
- Sprinkle salt and pepper and process until smooth
- Add cooled onion mixture and pulse to combine
- Place in treated 10” oval or 8” baking dish
- Bake for 20 minutes until heated and bubbly
- Serve with pita chips or crackers
