Wild Black Bean Brownies (courtesy of Teri McVeigh)
Ingredients
- 1 can black beans, drained
- 3 eggs
- 3 tbsp. coconut oil, melted
- ¼ cup cocoa or carob powder
- Pinch of salt
- ¾ cup raw sugar or maple syrup
- 1 tsp. vanilla extract
- 2 drops peppermint extract
- ½ cup milk chocolate chips
Preparation
- Preheat oven to 350°
- Lightly grease 8 x 8 baking dish
- Combine all ingredients except chocolate chips in a blender or food processor until smooth
- Pour batter into prepared dish
- Sprinkle with chocolate chips
- Bake about 30 minutes, until top is dry, and edges begin to pull away from sides of pan
