Baked Feta with Blood Oranges
Ingredients
- 2 blood oranges peeled and cut into wedges
- ½ cup Castelvetrano olives sliced
- ¼ cup capers
- ½ cup extra virgin olive oil
- 2 lbs. feta cheese blocks
- Freshly ground black pepper
- ½ tsp. crushed red pepper flakes
- Fresh dill fronds for garnish
- Toasted pita chips or salad greens for serving
Preparation
- Preheat oven to 425°
- In 8” baking dish layer blood oranges, capers and olives
- Drizzle generously with olive oil
- Top with feta cheese and drizzle with more lie oil and sprinkle with black pepper and red pepper flakes
- Cover with foil and bake for 20 minutes
- Remove foil and bake for 20 more minutes until cheese is softened and top is browned
- Remove from oven and scatter dill fronds on top and more capers
- Serve with toasted pita or spoon over salad greens and drizzle with blood orange oil for warm salad
