Casey's Crispy Ginger Snaps
Ingredients
- ¾ CUP BACON FAT – FROM 1-2 LBS. BACON
- 1 CUP SUGAR – PLUS ¼ CUP FOR DUSTING COOKIES
- 4 TBLSP. DARK MOLASSES
- 1 LARGE EGG
- 2 CUPS FLOUR
- 1 ½ TSP. KOSHER SALT
- 2 TSP. BAKING SODA
- 1 TSP. GROUND GINGER
- 1 TSP. GROUND CLOVES
- 1 TSP. GROUND CINNAMON
Preparation
- In a food processor using the metal blade, combine all ingredients and mix until dough forms.
- Cover dough with saran wrap and place in refrigerator for a few hours.
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper.
- Roll dough into ½ tsp. balls then roll into bowl of sugar to coat.
- Place onto cookie sheet and flatten into disk with fingers, space about 2 inches apart.
- Bake for 8 minutes until dark brown.
- Let cool for a few minutes before transferring to baking rack to finish cooling.
