Cherry Couscous Salad
Ingredients
- 2 oz. Arugula lettuce, washed and torn
- 1 head Romaine lettuce, washed and torn
- ½ lb. (about 2 cups) cherries, pitted and halved
- 2 stalks celery, chopped
- 4 oz. crumbled feta cheese
- 1/3 cup slivered almonds toasted
- ½ cup couscous
- Dressing
- ¼ cup extra virgin olive oil
- juice and zest from 1 lemon
- 2 tbsp. balsamic vinegar
- 1 tbsp. Dijon mustard
- 1 tsp. honey
- salt and pepper to taste
Preparation
- Prepare couscous, bring ¾ cup water, tsp. of olive oil and ¼ tsp. salt to boil in small saucepan
- Stir in ½ cup couscous and cover
- Remove from heat and let sit for 5 minutes
- Fluff with a fork and allow to cool
- Mix all dressing ingredients until well combined
- Add lettuces, cherries, celery, and couscous to salad bowl
- Add salad dressing and toss
- Add feta and almonds and toss again
- Serve
