Curry Chicken Salad
Ingredients
- 1 whole chicken breast, cooked and shredded (2 cups)
- 2 ribs celery sliced thin
- 2 carrots cleaned and coarsely chopped
- ¼ cup red onion finely chopped
- 2 radishes halved and thinly sliced
- ¼ cup roasted cashews roughly chopped
- ½ cup cilantro chopped
- *Optional - chopped apples, raisins
- Dressing
- 1 cup Greek yogurt
- Juice from 1 lime
- 1-2 tsp. ground curry
- 1/4 tsp, cayenne pepper
- 1/8 tsp. garam masala
- 1/8 tsp. turmeric
- salt and pepper to taste
Preparation
- If cooking chicken breast, bring salted water in a saucepan to a boil add chicken and cook for about 20 minutes, remove and cool
- You can also use meat from a rotisserie chicken
- Shred chicken breast and place in mixing bowl
- Add celery, onion, carrots, radishes, cashews, and cilantro
- Whisk together all ingredients for dressing, add to chicken mixture and fold until combined
- Adjust seasonings, cover, and refrigerate for a few hours before serving
