Ingredients
- 2 cans Albacore white tuna, water packed, drained
- ¼ cup mayonnaise
- ¼ cup "nely chopped celery
- ¼ cup "nely chopped red onion
- ¼ cup chopped parsley
- 1 tsp. red wine vinegar
- 8 slices Pumpenickel Bread
- 4 slices tomato
- 4 slices Swiss cheese
- Salt and pepper to taste
Preparation
- In mixing bowl combine drained tuna, mayonnaise, celery, onion, parsley and vinegar.
- Mix well, salt and pepper to taste.
- Toast bread.
- Spread 4 slices of bread with tuna salad, place tomato slice on each, top with slice of Swiss cheese.
- Place under broiler or in toaster oven until cheese is melted and bubbly.
- Place toasted bread slice on top. Enjoy!
