Ken's Not So Sweet Potatoes
Ingredients
- 4 sweet potatoes peeled and quartered
- 2 Tbsp butter
- 2 Tbsp milk
- 1/2 tsp. cayenne pepper
- 6 slices bacon cooked
- 2 Tbsp bacon fat
- 1/2 cup toasted walnuts chopped
- 1 cup crumbled blue cheese
- 1/2 cup chopped Italian at leaf parsley
- salt and pepper
Preparation
- Place sweet potatoes in pan, cover with water and boil until fork tender.
- Fry Bacon until crisp, reserving 2 tblsp. bacon fat.
- Crumble bacon.
- Remove from heat and drain.
- Mash potatoes with butter, milk, bacon fat and cayenne pepper.
- Fold in walnuts, blue cheese, bacon and flat leaf parsley.
- Salt and pepper to taste.
- Put in serving bowl and garnish with parsley, walnuts, bacon and blue cheese.
