Mint Pesto Tart
Ingredients
- 1 sheet of puff pastry thawed
- 1 ½ cup mint leaves
- 1 cup parsley leaves
- ¼ cup toasted chopped walnuts
- Juice and zest from 1 lemon
- Salt and pepper
- ¼ cup extra virgin olive oil
- ½ cup freshly grated parmesan cheese
Preparation
- Preheat oven to 400°
- Place dough on floured surface and roll out to 10x14 square
- Place dough on parchment lined baking sheet
- Pierce dough with fork over entire surface
- Make edge about ½ inch around dough exterior
- Bake dough for 12 minutes
- While dough is baking add mint, parsley, walnuts, lemon zest and juice to bowl of food processor with blade
- Process until coarse, scrape down
- While motor is running add olive oil through tube
- Add salt and pepper to taste
- If needed add more olive oil
- Remove dough from oven and spoon pesto over dough
- Add shredded parmesan and bake for 20 minutes
- Remove from oven, drizzle with more olive oil and cut into bite size pieces
