Cocoa Crinkle Cookies
Ingredients
- 2 cups sugar
- ¾ cup vegetable or canola oil
- ¾ cup unsweetened cocoa powder
- 4 eggs
- 2 tsp. vanilla
- 2 ½ cups all-purpose flour
- 2 tsp. baking powder
- ½ tsp. salt
- Powdered sugar (about 1 cup)
Preparation
- In mixing bowl, stir together sugar and oil, add cocoa and blend well
- Beat in eggs and vanilla
- Stir together flour, baking powder, and salt add to cocoa mixture and blend thoroughly
- Cover with cling wrap and refrigerate until dough is firm enough to handle; ideally overnight
- Heat oven to 350°
- Grease cookie sheet or line with parchment paper
- Shape dough into 1” balls and roll in powdered sugar
- Place on cookie sheet about 2” apart
- Bake for 12-14 minutes, until cookie is crackled and there is no indentation when lightly touched
- Remove from cookie sheet and place on wire rack to cool
