O’Brien’s Potatoes
Ingredients
- 3 or 4 Russet potatoes scrubbed and sliced ¼ inch
- 1-2 cups chopped peppers (Cubanelle, Green, Red, Jalapeno)
- 1-2 cups chopped onions
Preparation
- Bring large saucepan filled with water to boil
- Add teaspoon of salt and sliced potatoes
- Boil for 10-15 minutes until potatoes are fork tender
- Remove from heat and drain
- In large skillet warm a few tablespoons of olive oil
- Add onions and peppers and sauté over medium heat until softened
- Add potatoes and continue to cook until warmed through and crispy
