Watermelon Salad with Mint and Feta
Ingredients
- 1 watermelon (about 3 lbs.) cut into 2 inch chunks
- 1 small red onion sliced thin then halved
- 1 cucumber sliced, then halved
- Juice from 2 limes
- Zest from 1 lime
- 1/3 cup extra virgin olive oil
- 1 cup feta cheese crumbled
- ½ cup fresh mint leaves, chopped
- ½ cup toasted walnuts coarsely chopped
- Salt and pepper to taste
Preparation
- On large platter or shallow bowl place chunked watermelon.
- Layer onion and cucumbers on top.
- Crumble feta cheese and layer on top finishing with chopped mint then walnuts.
- In small bowl whisk together lime juice and olive oil and season with salt and pepper.
- Drizzle on assembled salad and sprinkle with lime zest.
- Serve immediately.
