Cornbread Brunch Squares
Ingredients
- 6 slices of bacon, crisp and chopped
- 1 8.5 oz. box corn muffin mix (Jiffy)
- 2 cups ½ & ½
- 6 eggs
- 2 tsp. kosher salt
- 1 cup grated sharp cheddar cheese
- ½ cup pickled jalapeno pepper rings, drained, dried and chopped
- 2 tbsp. chives, chopped
Preparation
- Heat oven to 350°
- Prepare 13x9 baking dish with non-stick spray
- Whisk corn bread mix and ½ & ½ until smooth
- Add eggs and salt and whisk to combine
- Stir in bacon, cheese, peppers and chives
- Pour batter into coated dish and bake 25-30 minutes
- Center may jiggle slightly when removed from oven
- Allow to cool for 15 minutes before serving
