Cold Peanut Asian Pasta Salad
Ingredients
- 16 oz. spaghetti, linguine or fettucine
- 1 cup crunchy peanut butter
- 3 tbsp. soy sauce and more as needed
- 2 tbsp. chili crisp
- 2 tsp. sesame oil
- 3 tsp. grated fresh ginger
- 1 cup thinly sliced English cucumber, slices quartered
- 6 green onions thinly sliced, white and green parts
- 2 tbsp. fresh squeezed lime juice
- ½ cup fresh chopped cilantro for garnish
Preparation
- Bring large pot of water to boil, add noodles and cook until al dente
- In large bowl add peanut butter, ginger, chili crisp and sesame oil
- Stir to combine
- Take 1 cup of pasta water and add a bit at a time until dressing is smooth
- Lay cucumber slices on top of dressing, do not mix into dressing and drizzle with soy sauce
- Drain the noodles, then add them to the bowl with the green onions and lime juice
- Toss until the noodles are evenly coated
- If the dressing is too thick, loosen it with reserved warm pasta water and mix until glossy
- Adjust the seasoning, sprinkle with chopped cilantro, and serve
