La Scala’s Chopped Salad
Ingredients
- 1 head iceberg lettuce, rinsed and finely chopped
- 3-4 leaves Romaine lettuce, washed and finely chopped
- 1 cup Italian salami julienned
- 1 cup shredded mozzarella cheese
- 1 15 ½ oz. can chickpeas, rinsed and drained
- Dressing
- 1/3 cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 tsp. Dijon mustard
- ½ tsp. salt and pepper
- ¼ cup grated parmesan cheese, more for serving
Preparation
- Place lettuce, salami, mozzarella, and chickpeas in large bowl
- Whisk together olive oil, vinegar, mustard, salt, pepper, and Parmesan cheese until well blended
- Pour over salad and toss well
- Garnish with additional Parmesan before serving
